Sous Chef [Indonesia]


 

A boutique style resort in Cook Islands is looking for a talented and enthusiastic Sous Chef (Full-time)

Responsibilities:

  • Oversee kitchen preparation and service on a day to day basis
  • Monitor and maintain consistent food standards and quality across all areas and during all stages of production
  • Monitor and maintain staff productivity levels as well as managing wage costs
  • Supply to ensure the HACCP procedure according to the company’s food safety
  • Accountable for the day to day running of the kitchen service in the absence of the Head Chef
  • Ensure stock takes are produced monthly in conjunction with the Head Chef
  • Participate in the design of seasonal menus and purchase all food
  • Ensure minimum wastage within the venue and all menus are priced accurately
  • Assist the Head chef in discipline of all staff in line of command in liaison with HR representative as required
  • Undertake staff briefing with all team members at the start of their working day
  • Communicate with the Head Chef and Supervisors regarding service times, service issues and guest information
  • Handle guest complaints promptly and diplomatically as well as bring all complaints to the attention of more senior chef or the Supervisor on shift
  • Attend pre-shift briefing session and ensure high product and service knowledge within the kitchen team

Requirements:

  • Indonesian citizen
  • Fluent in written and verbal English communication
  • Proven work experience as a Sous Chef or in a similar role
  • Diploma/Degree Certification in Culinary discipline
  • Understanding of various cooking methods, ingredients, equipments and procedures
  • Excellent attention to detail, punctual and dependable
  • Ability to work cohesively with fellow colleagues as part of a team
  • Flexible to work evenings and weekends as required
  • Ability to cope under pressure in a calm and efficient manner to set deadlines
  • Excellent interpersonal and communication skills
  • A winning and positive can-do attitude
  • Ability to lift and move equipment and supplies
  • Highly responsible & reliable
  • Proficiency in Microsoft Office and Outlook
  • Experience in stock taking and menu costing experience
  • Willing to relocate to Cook Islands

Job Type: Full-time

Salary: Rp26,000,000 - Rp29,000,000 per month
